With all the cold, snowy, icy weather today and tonight in northeast. Lets get cooking and make something hot tonight, don’t just order in.
Let us take a trip to the southwestern part of China to the province of Sichuan. The style of Szechwan cooking has bold flavors, particularly the pungency and spiciness resulting from the use of garlic and chili peppers. This recipe should warm up your taste buds and fill your gastric appetite.

Szechwan Beef & String Beans

Ingredients
- 2lb pepper steakjulienned
- 1lb string beanscleaned and trimmed
- 4 garlic clovesminced
- 1/4cup dark soy sauce* Can be purchased a a Local Asian market or look at our recipe included in the Soy Ginger Ribs.
- 2tbsp low sodium soy sauce
- 1tsp chili garlic pasteor 3-4 dried Chinese chiles ( the heat of the dish can be adjusted)
- 1/2tsp fresh gingerminced
- 2tsp sesame oil
- 4-6tbsp Peanut oil or Vegetable oil
- 1tsp sesame seeds
- 1tsp corn starch with 2 tsp cold water
- 2tbsp mirin
Instructions
Marinate
- In a large mixing bowl, combine beef, Mirin, light soy sauce, Sesame oil toss to coat. Cover the bowl with plastic wrap and place in the refrigerator for about 30 minutes to marinate.
Cooking
- Heat up your wok or pan for about 2 minutes and then add around 2 tablespoons vegetable oil and heat until the oil is smoking.
- Add the string beans to the pan and cook for 4-5 minutes, remove from pan and set aside.
- Add 2 tablespoons more of vegetable oil to the pain and heat pain again until it is hot. Then place the garlic,ginger cook for 2 minutes, and then add chili paste or dry chilis and cook for another minute.
- At this time you should add the beef and stir fry for around 2-3 minutes over high fire, until the beef is fully cooked and not pink.
- Then add the dark soy sauce and bring to a boil, and stir in the corn starch mixture cook until the sauce thickens.
- Place the string beans back into the pan with sesame seeds and coat with mixture well. Cook for another 2 minutes.
- Serve hot over a bed of rice.
